What are “winged” gyoza? – 羽根つき餃子とは –
“Hanetsuki gyoza” (winged gyoza) is a type of pan-fried dumpling characterized by a crispy, thin, wing-like crust extending from its edges.
*The thin crust (or “wings”) is created by pouring a mixture of water and flour (wheat flour or potato starch) into the frying pan.
They are called “winged (羽根つき -Hane tsuki
-)” gyoza because the thin, crispy layer surrounding the dumpling resembles a pair of spread wings.

“Nihao,(你好 -ニイハオ-)” “Konparu,(金春 -コンパル-)” and “Huanying(歓迎 -ホアンヨン-)”—all located in Kamata, Ota Ward, Tokyo—are considered the “Big Three” of *hanetsuki gyoza* (winged dumplings), with “Nihao(你好 -ニイハオ-)” said to be the place where the dish originated.
I posted about gyoza before. [Click here for gyoza posts. ] I didn’t recall ever eating gyoza with the crispy “wing” attached, so I decided to give it a try.
I did some research on my own.It originated at “Nihao (你好 -ニイハオ)” in Kamata, Ota Ward, Tokyo.I hadn’t had a chance to visit the Kamata area, but I did have an opportunity to go to the Minato City area of Tokyo; since there was a Shimbashi branch there, I decided to give it a try.

(;’∀’) I went to eat pan-fried dumplings with crispy edges, but I couldn’t decide what to order.
Double Gyoza Set: ¥900 (tax included)

It is very reasonably priced, even in 2026.
During lunch hours, we offer a wide variety of dishes, including lunch specials and ramen…À la carte: 5 Gyoza with crispy wings – ¥330 (tax included) and Shrimp in Chili Sauce Set Meal [Rice + Soup + Almond Tofu + Side Dish + Shrimp in Chili Sauce]: ¥1,000 (tax included)I ate it.

Left) I believe the shrimp in chili sauce contained about ten small shrimp.
They were larger than what you find at other places and had a firm, springy texture—a style that might divide opinion.
The sauce was a slightly sweet, thickened ketchup-based blend, and I found it delicious.
Right) The gyoza with the crispy “wing” offers a unique sensation.
Of course, it is still gyoza.
The filling is mild and easy to eat, with the garlic flavor kept subtle.
The seared side has the texture of a standard gyoza, while the other side is steamed.Chewy, mochi-like texture.
(*’ω’*) It might be because I was paying close attention to it, but even though the gyoza were on the smaller side, they offered a novel experience and were delicious.
(I’m not sure if those accustomed to eating it would notice it as much, though…)
If I’m in the area, I think I’ll try the crispy-skirt gyoza with a different set meal.

If you are sensitive to smells, you should probably avoid it.
I love garlic, and since I didn’t have any plans afterwards, I really indulged in it.
(*’▽’) It was very delicious.
Other options included pork and garlic chive gyoza (¥700, tax included), “Garlic Breeze” gyoza (¥700, tax included), and seasonal gyoza.
Half-and-Half Set – ハーフアンドハーフセット –

Half-and-Half Set ¥1,250 (tax included)Choose two varieties (5 pieces + 5 pieces) from the three standard gyoza options: Sakuichi Gyoza, Shiso Gyoza, and Stamina Gyoza.
Choose 2 types of gyoza (5 pieces + 5 pieces) + clay-pot cooked rice + 2 small side dishes + soup.
I chose the stamina gyoza and the shiso gyoza.
The two daily small side dishes were chilled tofu and simmered burdock root, and the daily soup was tomato soup.
If you have any dietary restrictions, it is best to ask before ordering.
I like eating gyoza with vinegar and pepper.
I asked the owner if there was a recommended way to eat it, but since he told me to “enjoy it however I liked,” I ate it with plenty of pepper added to the vinegar.
The gyoza were delicious, and when I checked while writing this post, I realized the rice was cooked in a clay pot—which explains why it tasted so good.
(;^ω^) I’m not a gourmet, and I don’t really know much about the differences in taste, but I later remembered that the rice was delicious.
The two daily small side dishes were also delicious and added a nice touch.
The daily soup was tomato soup; I had never eaten gyoza with tomato soup before, but I found that the tangy tomato soup actually paired really well with them.

I wanted to try all three of the standard gyoza varieties, so I chose the “half-and-half” set with Stamina Gyoza and Shiso Gyoza.
I also ordered an additional serving of Sakuichi Gyoza (8 pieces).
(*’▽’) I enjoyed eating it all without any trouble.

I searched for places nearby serving “hanetsuki gyoza” (gyoza with crispy wings of batter) in my area, and while a few options came up, I’m glad I chose Gyoza Sakuichi.
When I told a local friend that it was delicious, they already knew about the place, so it seems to be well-known; however, since it appears to be an independently run shop, I imagine it gets extremely crowded at times.

I visited for dinner at 6:00 PM; since there was space available, I sat in the tatami room by myself.

Utsunomiya: The City of Gyoza.I ended up here while looking up *hanetsuki gyoza* (dumplings with crispy wings).
Menmen in Utsunomiya offers a wide variety of Chinese dishes.
We offer a wide variety of options, including lunch specials, ramen, tsukemen, set meals, and à la carte dishes.I visited just before noon on a weekday; besides myself, there were two other people dining alone. After those two left, another solo customer arrived immediately, and there was also a woman dining by herself.
It was such a popular restaurant that even the four-person tables would fill up quickly.

The restaurant has approximately 35 seats, consisting of counter seating (7–8 seats) and table seating (16–18 seats).
Since I was alone, I was able to sit at the counter without waiting in line.

The menu offered a wide variety of options—including daily lunch specials, set meals, à la carte dishes, and ramen—but I decided on the “winged” gyoza set meal (rice, soup, a small side dish, and 8 gyoza) for ¥891 (tax included).
They use napa cabbage known for its sweetness and knead plenty of Chinese-style chicken stock into the filling; when grilled, the stock melts, resulting in a juicy gyoza.

Overall, the flavor is on the salty side, and no matter how well you wrap the filling, some of the meat juices will inevitably leak out when you grill it.However, the gyoza at “Gyoza Menmen” feature a crispy “wing” (a thin, lacy crust) that absorbs all the escaping juices, ensuring not a single drop of flavor is lost.
Take a bite of the crispy gyoza with its lacy, golden wings,
and the juices burst forth.
It was thoroughly cooked and very delicious.
I wasn’t very hungry, but I quickly ate it all.
(‘ω’) If I’m really hungry, I can even eat ramen as well.

This time, in search of gyoza with crispy wings, I visited “Utsunomiya Gyoza Menmen” and enjoyed their signature crispy-winged gyoza.
They were advertising their original tantanmen noodles for ¥1,045 (tax included) with a large banner in front of the shop, and I was also curious about their other dumplings, so if I’m ever in the area again, I’d like to try the original tantanmen noodles.
