Tsukemen is a type of noodle dish where you dip the noodles into a broth before eating, and it is generally considered a type of ramen.

Tsukemen (dipping noodles) is a dish that people either love or hate, both among foreigners and Japanese people.
(;^ω^)It’s a hassle to dip each noodle in the broth!Some people hold that opinion.I have a sensitive tongue and I’m not the type who likes to eat more noodles than broth, so I really like this.
The beginning – はじまり
Zaru ramen (ざるラーメン) There seem to be several theories about its origin, but one intriguing one is that around 1960, a noodle company in Iwate Prefecture heard that some people didn’t like the sour sauce of chilled ramen, and that’s how they developed a type of Chinese noodle that could be eaten with soba broth, similar to zaru soba.
The broth is typically a Japanese-style dashi with a soy sauce base, featuring a classic, slightly salty flavor characteristic of Japan, made with soy sauce, bonito flakes, and kelp.
The term “zaru” (笊 -ざる-) originates from the style of serving boiled and cooled Chinese noodles in a bamboo or other type of sieve.

Tsukemen (dipping noodles) – つけ麺 – It’s well-known that the original version is the “Special Mori Soba” devised by Kazuo Yamagishi in the 1950s as a staff meal for the Nakano Taishoken (中野大勝軒) restaurant.
Later, it became widely known through “Higashi-Ikebukuro Taishoken,(東池袋大勝軒)” which opened in 1961. Its characteristic style is to dip homemade medium-thick noodles into a soy sauce-based soup made with pork bones, chicken bones, and dried sardines.If you ask me what it tastes like, it’s a perfect balance of sweet, spicy, and sour, although it varies depending on the shop; I personally find it on the sweeter side.
When I was younger, I only ate soy sauce-based tsukemen (dipping noodles) with a Japanese-style broth, so I remember being shocked and delighted when I tried the sweet, spicy, and sour tsukemen from the Taishoken chain.
These days, there are many different kinds of dipping sauces available, including curry dipping sauce, tomato dipping sauce, flying fish broth, and kelp broth.Also, at some restaurants, the “soup for diluting the noodles (割スープ)” after you’ve finished eating is another enjoyable part of the meal.

This is a free service where, after you finish your noodles, you can add hot broth (such as seafood or kelp) to the rich dipping sauce and drink it as a soup. (Some restaurants may not offer this service.)
-It’s a unique finishing custom for tsukemen (dipping noodles), where the cooled broth is reheated, and the saltiness and umami are adjusted to ensure a delicious taste until the very last bite. I ask if I can have it before ordering or before I finish eating.
What kind of tsukemen (dipping noodles) do I like best…?

You can’t choose whether you prefer thick or thin noodles, soy sauce, salt, or miso broth, or seafood or pork bone broth.
Furthermore, recently there are also delicious creative versions of tsukemen (dipping noodles).
In Japan, you can find whatever tsukemen (dipping noodles) you want to eat, at any given time, unless you’re in a very remote area.

The dipping noodles, which are based on soy sauce broth, feature a sauce made with the umami of chicken bones, dried sardines, bonito flakes, and kelp, and come in a wide range of flavors, from light to rich.

This restaurant embodies an unwavering passion for Japanese ramen, carrying on the tradition of soy sauce ramen which is said to have originated at “Rairaiken (来々軒)” in Asakusa in 1910.
As it’s located in the tourist area of Asakusa, it can get very crowded depending on the time of day, but I also like their ramen (Japanese-style soy sauce) [¥950].If you want something refreshing after drinking alcohol, try the plum salt ramen [¥1,110].When I’m a little hungry, I eat Zaru Ramen [¥950].
And when I want to eat more, I also have the larger Japanese-style gyoza [3 pieces for ¥450].

It seems that in 1935, Ryosuke Yamada founded a handmade udon noodle specialty shop in Hiyoshi-cho, Tokorozawa City, Saitama Prefecture.
This chain, primarily located in Saitama Prefecture and throughout the Kanto region, upholds the origins of “noodles,” a traditional Japanese food, while constantly adapting to the needs of the times and offering delicious products at reasonable prices.
From udon and soba noodles to ramen and set meals, it truly captivates everyone from children to adults (this is just my personal opinion (;^ω^)).
This is a familiar shop for me, a resident of Saitama Prefecture.
I often eat udon and soba noodles, but when I want something salty or something light, I eat zaru ramen [¥640 (tax included)].

Mendokoro Honda Akihabara Main Store: Special Soy Sauce Tsukemen
麺処 ほん田 秋葉原本店 : 特性醤油つけ

It was founded in 2008 in Higashi-Jujo, Kita-ku, and relocated to Akihabara in 2020.
I ate there during the daytime on a weekday when it wasn’t crowded, while walking around Akihabara without knowing anything about it.
The restaurant was so crowded that there was even a staff member present when customers purchased meal tickets, and after I left, the number of people increased very quickly.
Special soy sauce dipping sauce [¥1,800 (tax included)] (December 2025). Given the location in Akihabara, I figured that price was justified, and since I was going to eat it anyway, I went for the “special” version.
When the waiter brings it to you,
1. Try eating the noodles as they are. 2. Try eating them with salt sprinkled on them. 3. Squeeze sudachi (a type of citrus fruit) over it before eating.
I received a brief explanation and tried eating it exactly as instructed…

I’m not the type of person who finds noodles delicious on their own, but these are delicious.
It looks like the noodles come with kelp broth.
A soy sauce-based dipping sauce.The saltiness, sweetness, and sourness are in perfect balance, and the rich umami of the animal-based broth is very satisfying.Each piece of meat and the soft-boiled egg were delicious.
Next time I have the chance to eat there, I think I’ll try the special salt-marinated ramen [¥1,800 (tax included)].

It was a limited-time offer, available from October 1st, 2025 until supplies ran out, so I think it was sold until around January 2026. (Since it was until supplies ran out, some stores may have sold it earlier or later.)
I usually prefer to eat Kyoto-style pork back fat soy sauce ramen.When something is only available for a limited time, it makes me want to try it!
This limited-time, stamina-boosting dish features thick, whole-wheat noodles served in a warm, ginger-infused soy sauce-based dipping sauce.
Summer is over, and ginger will warm you right up!
The seasoned egg, ginger, soy sauce, and meat dipping noodles [Regular size ¥1,078 (tax included), Large size ¥1,232 (tax included)] use seasonal ginger, resulting in a refreshing yet hearty flavor.
A heaping pile of bean sprouts and green onions, sweet and savory braised meat, bamboo shoots, and seaweed.
The noodles are thick, specially made with fragrant whole wheat flour, and the dipping sauce is a warm ginger soy sauce base.
I’ll try it again if they sell it again.

The main store appears to have a white sign with red lettering.
Kyoto Kitashirakawa Ramen Kairikiya, whose main product is “Kyoto-style pork back fat soy sauce ramen,(京都北白川ラーメン魁力屋)” is said to have opened 175 stores (122 directly managed stores and 53 franchise stores, etc.) by the end of December 2025, located along roadsides and in food courts within commercial facilities.
At every store I’ve been to so far, they offer free green onions and pickles, which are very useful for cleansing the palate.

Pork Bone And Seafood Soy Sauce Base – 豚骨魚介醤油 系
The Tonkotsu Gyokai Shoyu style is a mainstream style of tsukemen (dipping noodles) characterized by a rich dipping sauce made by blending animal-based soups such as pork bones and chicken bones with seafood broths such as dried sardines, bonito flakes, and mackerel flakes, and seasoning it with soy sauce.
I’m not a professional, so my classification might be wrong, but I’ll classify them to the best of my ability.
Taishoken Shinoya: Tsukemen “Mori Soba”
大勝軒しのや : つけめん「もりそば」

I handed the bowl of soup to the staff and they added it for me.
This shop is located in Sugito-machi, Kitakatsushika-gun, Saitama Prefecture. Whenever I pass by, there are always a lot of people and cars, so it’s a popular place, and I’ve always been curious about it. (There’s a large parking lot next to the shop.)
Located in a tranquil area of Saitama Prefecture, I’ve tried other Taishoken-style restaurants, but whether it’s the quality of the water or the owner’s dedication, the soup and noodles here were incredibly fresh and delicious.
Although it’s not visible in the picture, the soup also contains substantial slices of char siu pork and half a boiled egg.
This restaurant offers a morning service where, for orders placed between 7:00 and 10:30, you can get one of the following items as a service:
seasoned egg(味玉), char siu pork(チャーシュー), bamboo shoots(メンマ), half a bowl of rice(半ライス), seaweed(岩のり), or seasoned green onions(味ネギ).
I chose the seasoned egg.
The reason the noodle portion in the image above is half the usual amount (150g) is because I ordered the gyoza set (dipping noodles: 150g noodles + one mini rice bowl of your choice from three options + two jumbo gyoza) [¥1,550 (tax included)].

The jumbo dumplings were about the size of three small dumplings, and they took a while to cook, so they arrived later, but they were very filling and delicious.
The prices seem to have gone up overall compared to before, but I was able to eat my fill for ¥1,550 and it was very delicious, so I’m very satisfied.
Next time, I want to challenge myself to a large serving of noodles (600g) to fully enjoy them.

Otaru Ramen Mame no Ki Hirakata Branch: Seafood Soy Sauce Tsukemen

“Otaru Ramen Mame no Ki (小樽らーめん豆の木)” offers a wide variety of menu items.
You can choose between ramen or tsukemen (dipping noodles).
The ramen is said to be “Otaru Noodles,” which have a firm yet smooth texture, allowing you to experience the authentic taste of Otaru.
This is a familiar store that has been in my area for a long time.
As of April 2026, it appears there are two stores: Mame no Ki Bingo Store – 備後店 -(Kasugabe City, Saitama Prefecture) and Mame no Ki Hirakata Store – 平方店 –
(Hirakata, Koshigaya City, Saitama Prefecture).
The ramen I ate at was Otaru Ramen Mame no Ki, Hirakata branch.
They apparently recreate the taste of Otaru ramen from Hokkaido, and the “Otaru Rich Miso Ramen” is highly recommended.。
Even so, I still crave tsukemen (dipping noodles).
As the name “Seafood Soy Sauce Tsukemen” [¥1,200 (tax included)] suggests, the seafood flavor is quite strong.
Adding extra vegetables as a topping [¥120 (tax included)] resulted in a lighter flavor.

Katsuryu Roadside Station Kasama Branch: Toku no Setsukemen

I had been curious about Katsuryu ( 活龍 ), which is said to be “the most popular tsukemen (dipping noodles) in Ibaraki,” and when I happened to pass by, I found a branch at Michi-no-Eki Kasama (22-1 Tegoshi, Kasama City, Ibaraki Prefecture 309-1621), so I tried it.
“Tsukemen Ramen Katsuryu” is apparently the second brand of Tenpen Dash Company.
Main store, Ibaraki University branch, Mito Yonezawa-cho branch, Michi-no-Eki Kasama branch, Koukakudo, Makabeya.
Currently operating 16 stores including the franchised Arakawaoki branch, Ushiku branch, Sakai branch, Naka branch, Shimodate branch, Toridake Mito branch, and Tatsuro. (As of March 2026)
The Kasama Roadside Station branch opened in September 2025, and it seems I ate there shortly after it opened. However, as of March 2026, while editing this post, my research indicates that the “Tokunosetsukemen” is not available at the Katsuryu Kasama Roadside Station branch.
(;・∀・)I apologize for the delay in posting this as it’s a personal post, but it seems that “Tokunosetsukemen [¥1,480]” is available at Katsuryu Main Store (1-10-27 Tsukubo, Tsukuba City, Ibaraki Prefecture), so I’m posting it here.
As of March 2026, when I am editing this post, Katsuryu Roadside Station Kasama branch offers Tsukemen [¥1080] and Meat Tsukemen (with extra meat in the soup) [¥1370]. They also have Hand-kneaded Chinese Noodles [¥890], Yuzu Salt Noodles [¥870], Gyoza [5 pieces for ¥380], and Mont Blanc Tantanmen [¥1,600], and I would like to try the Mont Blanc Tantanmen next time.
*Ibaraki Prefecture boasts the largest cultivated area and harvest volume of chestnuts in Japan, and Kasama City is said to be a representative chestnut producing area.
The dipping sauce was a rich seafood and pork bone broth, and the thick noodles were hearty and chewy, making it very satisfying and delicious.

The soup is soy sauce-based with added vinegar and citrus fruits, resulting in a refreshing aftertaste and an appetizing aroma, but it’s a dish that people either love or hate.
Apparently, it was developed based on the idea of chilled ramen, and I like how it reduces the heaviness of the rich soup, resulting in a refreshing taste.
Ramen Shop Tsubaki Matsubushi Branch: Tsukemen Chashu Ramen

“Ramen Shop (commonly known as “Ra-sho”)” is a tonkotsu shoyu ramen franchise chain with over 300 locations nationwide, headquartered by Tsubaki Shokudo Management.
This chain is easily recognizable by its red sign and the word “delicious,(うまい)” and is characterized by its early morning hours, a relaxed atmosphere where store managers have a lot of discretion beyond the provision of noodles and sauces, and the unique flavors of each individual store.
I’ve been to many “Ramen Shop (ラーメンショップ)”, and I’m happy that they all have grated garlic on the side, and the noodles are medium-thin straight to curly, which is just right for me since I don’t like thick noodles.
Ramen Shop Tsubaki Matsubushi branch is located in Matsubushi-machi, Kitakatsushika-gun, Saitama Prefecture, and it’s on a road I often pass by. It’s always crowded, so I’ve been curious about it.
There is ample parking in front of the store.
The tsukemen at Ramen Shop has a rich, sweet and sour pork bone and soy sauce-based soup, which is something that people either love or hate.I like sour flavors, and I especially like adding grated garlic, so I went all out and ordered the “Tsuke Chashu Ramen [¥1,150 (tax included)]”.
Ramen is ¥690, tsukemen is ¥790, and the char siu tsukemen is ¥360 more expensive, the only difference being whether or not it includes the char siu shown in the image above!
(‘ω’)The char siu Tuke-Men was impressive and disappeared in no time, and I forgot to ask about the extra broth!

Set Meal Chinese Noodles Hachifuku Shokudo: Meat Juice Chinese Dipping Noodles

I was on a long trip and was so hungry that I decided to eat something, and when I saw a sign for a set meal restaurant, I went in for the first time.
This is a restaurant where you enter and purchase meal tickets with cash. There are so many menu items that I was having trouble deciding, so the staff told me, “Please sit down and decide before purchasing your ticket.” I and the other customers who came in after me followed the same style and looked at the menu at our seats.
I sat down and examined the menu, and my eyes fell on the meat broth Chinese dipping noodles [¥1,350 (tax included)]. I had the option of having two servings of noodles or one serving of noodles plus half a bowl of rice, but I bought the meat broth Chinese dipping noodles and, when I handed it to the staff, I asked for “one serving of noodles + half a bowl of rice”.
First, I was surprised to see that the dipping noodles came with shichimi, vinegar, pepper, and Tabasco as condiments, but I was even more surprised when I tasted it!

This is where opinions diverge!It’s a pork bone and soy sauce-based soup with a sour taste and a generous amount of garlic!
I was driving alone, but I could smell it in the car until I ate my next meal!
I like garlic to counteract the sourness, and the pork chashu and pork belly in the soup were also delicious. It seems they use branded pork from Yorii Town, Saitama Prefecture.
The noodles were medium-thick and flat, and they were so fresh that I could tell the water must be delicious.
When I looked at reviews after visiting a restaurant for the first time, I found that opinions were divided. I didn’t mind the fact that you have to decide what to order at your table beforehand, but it seems that some people do.
While opinions on the taste are divided, I found it very delicious, and next time I’d like to try either a double portion or ramen.
It was so delicious that I ate it all without using any of the condiments that were provided, and because it was so good, I forgot to ask about the soup to dilute it.

Ramen Mamezou Koshigaya Laketown Store: Tsukemen (Dipping Noodles)

Ramen no Mamezou apparently started with a store in Soka at the end of 2000, and now has three stores in Saitama Prefecture: Soka, Urawa, and Koshigaya Laketown.
*Even though it’s called the Koshigaya Laketown store, it’s not actually located inside Koshigaya Laketown.
When I was younger, I often ate at Mamezo Ramen [Regular size ¥869 (tax included), Large size ¥1,001 (tax included)].
I had never eaten tsukemen (dipping noodles) before, so I decided to try it.
Mamezou Tsukemen [Regular ¥924 (tax included), Large ¥1,056 (tax included)] features a refreshing, slightly tangy pork bone and soy sauce-based broth. The dish consists of medium-thick, chewy noodles, two slices of tender char siu pork, one soft-boiled marinated egg, and shredded nori seaweed.I handed the waiter my request for the broth to dilute the soup when I was almost finished eating, and he kindly poured it for me.
I also added the mini char siu rice bowl (¥165 including tax), which is only available during weekday lunches (11:00-14:45), and enjoyed the rice bowl with the broth, which was just right after adding some of the soup base.

Kelp and Flying Fish (Ago) Broth – 昆布や飛魚(あご)出汁 系
This “tsukemen” (dipping noodles), based on a broth made from kelp and flying fish [飛魚(あご)], has a refined and rich umami flavor and seems to be gaining popularity in recent years. I never ate it when I was younger, but it’s addictive.

The first time I ate there was at the Ueno store (4-1-5 Ueno, Taito-ku, Tokyo), but now they’ve opened a location closer to where I live, making it easier to eat there.
The special broth is made with a base of kelp and seafood, with scallops added for extra flavor, and the noodles are custom-made flat noodles developed in collaboration with a long-established noodle factory in Kyoto.
The noodles are submerged in kelp water (or something similar) to prevent them from clumping together until you finish eating the dipping noodles.
Since I only eat it occasionally, I always order the large size (Special Kombu Water Tsukemen (Large) [¥1,650 (tax included) *September 2025]).
Lately, as I’ve gotten older, I can’t eat as much, but before I knew it, I had finished eating.
“Yakiago Shio Ramen Takahashi” is a popular ramen chain that operates mainly in the Tokyo metropolitan area (Tokyo, Saitama, and Kanagawa prefectures).
They have stores in Shinjuku (the main store), Ueno, Ginza, Gotanda, Kita-Senju, Kawasaki, Koshigaya Laketown, and apparently they also have a store in Aichi Prefecture.

The rich pork bone and seafood broth is enhanced with miso. There are also spicy versions with added sesame sauce, chili oil, and garlic.
Marukin Honpo Kasukabe Store: 100-Year Miso Tsukemen (Dipping Noodles)

“Hyakunen Miso Ramen Marukin Honpo” opened its main store in Minami-Koshigaya, Koshigaya City, Saitama Prefecture in 2012 and began expanding from there. Since it’s close to where I live, it’s a very familiar miso ramen specialty shop to me.
They focus on “miso,” which is the origin of Japanese food culture, and are constantly creating, selling, and developing new miso ramen dishes and spaces. Many people around me say that when it comes to miso ramen, they think of Marukin Honpo.
I also like their miso ramen [¥900 (tax included) and up], but I’ve never had tsukemen at Marukin Honpo, and I haven’t had miso tsukemen very often either, so I decided to give it a try.
I ordered the Hyakunen Miso Tsukemen [¥1,050 (tax included)] and followed the restaurant’s Instagram account, which entitles me to a free seasoned egg every time I visit their main store in Minami-Koshigaya, the Omano store, or the Kasukabe store, so I decided to follow them.
The image shows that an extra marinated egg has been added.
I was surprised when I ordered tsukemen for the first time, but lighting a lantern to keep the broth warm is something I think I’ve never seen at any other restaurant!
It might be exclusive to the Kasukabe store, or perhaps they don’t have it when they’re busy…
The dipping sauce has a rich miso flavor, and the deliciousness of the ingredients has melted into the piping hot sauce. We added grated garlic to make it even richer!
The noodles are quite substantial; a regular serving is 250g, a large serving is 375g (+¥150 incl. tax), and an extra-large serving is 500g (+¥250 incl. tax). The picture above shows the regular 250g portion that I ordered.
I added the lunch set (weekdays 11:00-16:00 [excluding holidays]), which is the lunch gyoza set [rice + 3 gyoza: ¥340 (tax included)].
The noodles were so fresh and delicious that I never got tired of them. I finished the noodles first, leaving the rice and dumplings for later, before enjoying the broth.

I received a complimentary ice cream bar when paying the bill, which was very refreshing!
This is recommended for those who love the savory aroma and rich flavor of miso.

Hidaka-ya: Spicy Tonkotsu Tsukemen (Dipping Noodles) – Limited Time Offer –

The spicy tonkotsu tsukemen [¥650 (tax included)] is a popular menu item that made a comeback for a limited time from July 4th, 2025, after a two-year hiatus. I had never tried it before, so I decided to give it a go.
This spicy and flavorful tsukemen features a rich pork bone-based broth that perfectly complements the secret spicy miso and chili oil, and the chewy, thick noodles (1.5 servings) are coated in it beautifully, making it incredibly satisfying.
The toppings are seaweed, bamboo shoots, and char siu pork.
When it was first released, they also had a gyoza set [¥930 (tax included)] and a half-size fried rice set [¥940 (tax included)], making it a great deal for those who want a hearty meal!
(;^ω^) I don’t like spicy food, so I think people who don’t like spicy food will find it spicy.

Tamamo-tei, located in Iwatsuki Ward, Saitama City, Saitama Prefecture, is a restaurant that offers a wide variety of dishes, from set meals to ramen and tsukemen (dipping noodles).
Using noodles made in our own factory, our tsukemen takes some time from ordering to serving, but every bowl of tsukemen comes with a hot stone and a separate soup for diluting the broth.

I always have trouble deciding what to order, but the meat and eggplant tsukemen (肉ナスつけ麺) is delicious and I eat it often.
The soup is soy sauce-based, but I don’t think you’ll find many tsukemen (dipping noodles) that come topped with a rich, spicy sauce containing pork, eggplant, bell peppers, and onions.
Although it’s described as mildly spicy, even I, who don’t like spicy food, can enjoy it. However, those with a higher tolerance for spiciness might want to choose something else.
The fact that you can add either Set A [rice + 4 dumplings + small side dish + furikake] + ¥250 (tax included) or Set B [4 dumplings + small side dish] + ¥200 (tax included) to your ramen, tsukemen, or yakisoba is also a great attraction.
The restaurant has both table seating and counter seating, making it easy to visit even alone. There are also tatami mat seats, which are safe for those with small children. It gets crowded during lunchtime, so I go at a different time.
Because Saitama Stadium 2002 and Aeon Mall Urawa Misono are nearby, the roads get congested on Saturday and Sunday mornings and evenings. (Though it’s better than in central Tokyo.)
There is a large free parking lot, but it is located at a traffic light intersection, so please be careful when entering and exiting.

I live in Saitama Prefecture in the Kanto region, so my recommendations will be biased towards Kanto, but lately there are some chain restaurants that serve delicious food, and some that are visually interesting, so I’d like to feature a wide variety of options.
