Ramen – ラーメン(拉麺) –

Ramen is a Chinese-style noodle made by kneading and stretching wheat flour, and is a dish made with soup and ingredients.In Japan, it is also called “ramen(ラーメン)” or “chuka soba(チュウカソバ).”

In Japan, it is common to season it with soup made from soy sauce, salt, pork bone broth, or miso, and ingredients often include roasted pork fillets, bamboo shoots, seasoned eggs, chopped green onions, seaweed, and Narutomaki.
The soup is made by diluting the seasoning mixture that is used to turn the soba soup into soup stock .

Another dish I like is “tsukemen(ツケメン)”, a noodle dish in which the boiled noodles and rich soup are served separately.
The noodles are eaten by scooping them up and dipping them in the soup, allowing you to enjoy the firmness of the noodles and the flavor of the soup.
Depending on the restaurant, tsukemen may be called “zaru ramen(ザルラーメン)” or “zaru chuka(ザルチュウカ).”

Tonkotsu ramen is popular overseas, but I also like light soy sauce ramen and salt ramen.

In Japan, the water hardness varies depending on the region, but the water is generally soft.
Soft water is characterized by having little unpleasant odor and a mellow flavor, and is said to go well with Japanese cuisine in general, which places importance on aroma and flavor, so I think one of Japan’s strengths is that we can continue to eat light ramen.
Sometimes I want to eat really oily ramen.・・・(‘ω’)

The noodles are medium-thick and curly, with a soy sauce-based soup and soft pork slices, making it a flavor that never gets old and can be enjoyed even after drinking alcohol, and it suddenly makes me crave it.

Veggie Ramen:タンメン(湯麺)

Saitama Tanmen Yamada Taro: Rich Tanmen(埼玉タンメン 山田太郎:濃厚タンメン)
It’s packed with the delicious flavor of vegetables and the richness of the double soup (pork bone and chicken bones). The wheat used is apparently from Hokkaido, and although the noodles felt a little thicker than the medium-thick noodles, they mixed well with the soup and were surprisingly light.

You can choose thin or medium-thick noodles. I choose thin noodles.
Ramen Kagetsu Arashi’s most popular standard menu item is the pork bone-based back fat soy sauce ramen, which is characterized by its matured “secret sauce” and is delicious served with half a boiled egg.

Salt Ramen:シオラーメン(塩拉麺)

Kourakuen: Salt Ramen(幸楽苑:塩らーめん)
This old-fashioned, light salt ramen has medium-thick, curly noodles that go down smoothly.
The ingredients are classic and familiar to Japanese people: nori seaweed, bamboo shoots, chopped green onions, naruto, and char siu.

In February 2025, you will be able to enjoy the cheap and delicious “Shio Ramen” for ¥490 (tax included).

Miso Ramen:ミソラーメン(味噌拉麺)

Kurumaya Ramen: Miso Ramen(くるまやラーメン:味噌ラーメン)
Kurumaya Ramen is a chain that has expanded from the Kanto region to the Tohoku and Tokai regions, and mainly serves miso flavor.
Kurumaya Ramen’s miso ramen is filled with bean sprouts and garlic, which is something I sometimes crave.

In February 2025, the Miso Ramen will be ¥800 (tax included). I’ll go there when I want to get energized with garlic.

Ramen Aokitei: Classic miso ramen(Medium size)

Ramen Aokitei has five stores mainly in Saitama Prefecture.
The “standard” version comes with nori seaweed, five slices of pork, wakame seaweed, half a seasoned egg, and shredded green onions, and even the medium-sized serving of noodles is 1.5 to 2 times the volume of what you’d get at a chain restaurant.
